Ingredients

Scale

For the Ground Beef:

  • 1 lb (450g) ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Salad Base:

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, sliced
  • ½ cup red onion, thinly sliced
  • 1 cup shredded carrots

Optional Toppings:

  • ½ cup shredded cheddar cheese
  • ¼ cup dill pickles, diced
  • 1 avocado, sliced

For the Dressing:

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 tablespoon pickle juice
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  • Prepare the Beef:
    • Heat a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks.
    • Season the beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well and cook for another 2-3 minutes. Remove from heat and set aside.
  • Make the Dressing:
    • In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, smoked paprika, salt, and pepper until smooth. Set aside.
  • Assemble the Bowls:
    • Divide the chopped romaine lettuce among four serving bowls.
    • Top each bowl with cherry tomatoes, cucumbers, red onion, shredded carrots, and optional toppings like shredded cheese, pickles, or avocado slices.
  • Add the Beef:
    • Spoon the cooked ground beef evenly over the salads.
  • Finish with Dressing:
    • Drizzle the dressing over each bowl or serve on the side. Toss gently to combine.
  • Serve:
    • Enjoy immediately or store components separately in airtight containers for meal prep.

Notes

  • For a leaner option, substitute ground beef with ground turkey or chicken.
  • Add roasted sweet potato cubes for extra heartiness.
  • Feel free to customize the vegetables based on your preference or what’s in season.
