Description

This creamy and cheesy rice is the perfect comfort food, packed with gooey cheese, rich flavor, and a velvety texture. Whether served as a side dish or a hearty main course, this recipe comes together quickly and pairs well with just about anything. It’s ideal for busy weeknights or whenever you need a quick, satisfying dish.

Ingredients

Scale
  • 1 cup uncooked white rice (long-grain or jasmine)
  • 2 cups water or chicken broth
  • 1 tablespoon butter
  • 1 cup shredded cheddar cheese (or a blend of your favorite cheeses)
  • 1/4 cup cream cheese, softened
  • 1/4 cup milk (more as needed for consistency)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • Optional garnish: chopped parsley or green onions

Instructions

  • Cook the Rice:
    • In a medium-sized saucepan, combine the rice and water (or chicken broth). Bring to a boil, then reduce the heat to low. Cover and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat.
  • Add Butter and Cheese:
    • While the rice is still warm, stir in the butter, shredded cheese, and cream cheese. Mix until the cheese is melted and the rice is creamy.
  • Add Milk and Seasoning:
    • Gradually stir in the milk to reach your desired creamy consistency. Add garlic powder, onion powder, salt, and black pepper. Stir well to combine.
  • Garnish and Serve:
    • Transfer the cheesy rice to a serving dish. Garnish with chopped parsley or green onions for a pop of color and flavor, if desired. Serve hot.

Notes

  • For extra flavor, you can mix in cooked vegetables like broccoli, peas, or sautéed mushrooms.
  • To make it heartier, stir in cooked chicken or shrimp.
  • For a spicier version, add a pinch of cayenne pepper or a drizzle of hot sauce.
