Description
This creamy, smoky, and slightly spicy Chipotle Queso is the perfect dip for chips, drizzle for nachos, or sauce for your favorite Tex-Mex dishes. Made with real cheese, smoky chipotle peppers, and a hint of spice, it’s a crowd-pleaser that’s as easy to make as it is to enjoy.
Ingredients
Scale
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 ½ cups whole milk
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1–2 chipotle peppers in adobo sauce, minced (adjust to taste)
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp onion powder
- Salt to taste
- 2 tbsp chopped cilantro (optional, for garnish)
- Tortilla chips, for serving
Instructions
- Prepare the Roux:
In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes, whisking constantly, until the mixture is golden and bubbling. - Add Milk:
Gradually whisk in the milk, ensuring no lumps form. Cook for 3-4 minutes, stirring, until the mixture thickens slightly. - Incorporate Cheese:
Reduce the heat to low. Add the cheddar and Monterey Jack cheeses a handful at a time, stirring until fully melted and smooth. - Add Flavor:
Stir in the minced chipotle peppers, smoked paprika, garlic powder, and onion powder. Taste and adjust the seasoning with salt if needed. - Serve:
Transfer the queso to a serving bowl. Garnish with chopped cilantro if desired. Serve warm with tortilla chips or use as a topping for your favorite dishes.
Notes
- For a milder queso, start with one chipotle pepper and add more to taste.
- To keep the queso warm for longer, transfer it to a slow cooker set to the “warm” setting. Stir occasionally.
- For extra creaminess, you can add a splash of heavy cream.
