Description

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 12 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • Salt to taste
  • 2 tbsp chopped cilantro (optional, for garnish)
  • Tortilla chips, for serving

Instructions

  • Prepare the Roux:
    In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes, whisking constantly, until the mixture is golden and bubbling.
  • Add Milk:
    Gradually whisk in the milk, ensuring no lumps form. Cook for 3-4 minutes, stirring, until the mixture thickens slightly.
  • Incorporate Cheese:
    Reduce the heat to low. Add the cheddar and Monterey Jack cheeses a handful at a time, stirring until fully melted and smooth.
  • Add Flavor:
    Stir in the minced chipotle peppers, smoked paprika, garlic powder, and onion powder. Taste and adjust the seasoning with salt if needed.
  • Serve:
    Transfer the queso to a serving bowl. Garnish with chopped cilantro if desired. Serve warm with tortilla chips or use as a topping for your favorite dishes.

Notes

  • For a milder queso, start with one chipotle pepper and add more to taste.
  • To keep the queso warm for longer, transfer it to a slow cooker set to the “warm” setting. Stir occasionally.
