Topping:

  • ½ cup shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon coconut oil
  • 2 tablespoons dark chocolate chips (optional)

Instructions

  1. Prepare the Base Layer:

    • Add the pitted dates, rolled oats, almonds, coconut oil, vanilla extract, and sea salt to a food processor.
    • Pulse until the mixture forms a sticky, crumbly dough that holds together when pressed.
    • Press the mixture firmly into a lined 8×8-inch baking dish to create an even layer. Set aside.
  2. Make the Topping:

    • In a small saucepan over low heat, melt the coconut oil and honey (or maple syrup). Stir until combined.
    • Add the shredded coconut, mixing well.
    • Spread the coconut mixture evenly over the base layer in the dish.
  3. Optional Chocolate Drizzle:

    • Melt the dark chocolate chips in a microwave-safe bowl in 15-second intervals, stirring in between.
    • Drizzle the melted chocolate over the top of the coconut layer for a decorative finish.
  4. Chill and Set:

    • Place the dish in the refrigerator for 2-3 hours, or until firm.
    • Once set, cut into squares and enjoy!
