Description

Greek Salad, also known as Horiatiki, is a vibrant and refreshing dish that captures the essence of Mediterranean cuisine. Made with crisp vegetables, creamy feta cheese, and a simple olive oil dressing, this salad is a perfect appetizer, side dish, or light meal. It’s easy to prepare and bursting with authentic Greek flavors!

Ingredients

Scale
  • Vegetables:
    • 4 medium tomatoes, roughly chopped
    • 1 medium cucumber, peeled and sliced into rounds or half-moons
    • 1 green bell pepper, thinly sliced
    • 1 small red onion, thinly sliced
  • Cheese:
    • 200g (7 oz) feta cheese, cut into large chunks or crumbled
  • Extras:
    • 1520 Kalamata olives
  • Dressing:
    • 4 tablespoons extra-virgin olive oil
    • 1 tablespoon red wine vinegar
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt (to taste)
    • 1/4 teaspoon freshly ground black pepper

Instructions

  • Prepare the Vegetables:
Wash and dry the vegetables. Chop the tomatoes into bite-sized pieces, slice the cucumber and bell pepper, and thinly slice the red onion. Combine these in a large salad bowl.
  • Add the Olives and Feta:
Scatter the Kalamata olives over the vegetables. Place the chunks of feta cheese on top.
  • Make the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper until well combined.
  • Dress the Salad:
Pour the dressing over the salad just before serving. Toss gently to avoid breaking the feta, or leave it as a composed salad for a traditional presentation.
  • Serve:
Garnish with an extra sprinkle of oregano if desired. Serve immediately with crusty bread or as part of a larger Mediterranean spread.

Notes

  • Use the freshest vegetables for the best flavor.
  • If available, opt for Greek olive oil and feta for an authentic taste.
  • This salad is naturally gluten-free and vegetarian.
  • For a heartier meal, serve with grilled chicken or falafel.
