- 4 medium tomatoes, roughly chopped
- 1 medium cucumber, peeled and sliced into rounds or half-moons
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- Cheese:
- 200g (7 oz) feta cheese, cut into large chunks or crumbled
- Extras:
- 15–20 Kalamata olives
- Dressing:
- 4 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon freshly ground black pepper
Instructions
- Prepare the Vegetables:
Wash and dry the vegetables. Chop the tomatoes into bite-sized pieces, slice the cucumber and bell pepper, and thinly slice the red onion. Combine these in a large salad bowl. - Add the Olives and Feta:
Scatter the Kalamata olives over the vegetables. Place the chunks of feta cheese on top. - Make the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper until well combined. - Dress the Salad:
Pour the dressing over the salad just before serving. Toss gently to avoid breaking the feta, or leave it as a composed salad for a traditional presentation. - Serve:
Garnish with an extra sprinkle of oregano if desired. Serve immediately with crusty bread or as part of a larger Mediterranean spread.
