Ingredients
Scale
- 1 lb (450 g) ground chicken (preferably a mix of light and dark meat for juiciness)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp ground black pepper
- 1/2 tsp ground fennel seeds
- 1/2 tsp dried sage
- 1/4 tsp crushed red pepper flakes (optional, for a bit of heat)
- 1/4 tsp dried thyme
- 1 tbsp olive oil (for cooking, if making patties or frying)
Instructions
- Prepare the Chicken Mixture:
In a large bowl, combine the ground chicken with all the spices. Mix thoroughly until evenly combined. Use your hands for the best results, but be careful not to overwork the meat. - Shape the Sausage:
- For patties: Divide the mixture into 8 equal portions and shape each into a patty about 3 inches in diameter.
- For crumbled sausage: Leave the mixture as is for later crumbling during cooking.
- Cook the Sausage:
Heat a large non-stick skillet over medium heat and add the olive oil.- For patties: Cook each patty for 4–5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- For crumbled sausage: Add the seasoned chicken directly to the skillet, breaking it into pieces with a spatula. Cook until browned and fully cooked.
- Serve:
Use immediately in your favorite dishes—breakfast sandwiches, pasta, or as a side to scrambled eggs. You can also refrigerate cooked sausage for up to 3 days or freeze uncooked portions for up to 2 months.
Notes
- For a juicier sausage, you can add 1–2 tablespoons of cold water or chicken stock to the mixture before shaping.
- Feel free to customize the seasoning to your taste. Add herbs like parsley or a pinch of cayenne for extra flavor.
- If making links, you’ll need sausage casings and a sausage stuffer attachment.
