  • 1.5 lbs steelhead trout fillet, skin on
  • 2 tablespoons olive oil

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

  • ½ teaspoon black pepper
  • 1 lemon, sliced into rounds

For the Lemon Herb Butter:

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  • Preheat the Oven
    Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  • Prepare the Trout
    Pat the trout fillet dry with paper towels and place it skin-side down on the prepared baking sheet.
    Drizzle olive oil over the fillet, then sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the seasoning gently to coat evenly. Lay the lemon slices on top.
  • Bake the Trout
    Bake in the preheated oven for 15–18 minutes, or until the trout flakes easily with a fork.
  • Make the Lemon Herb Butter
    In a small bowl, combine the softened butter, parsley, dill, garlic, lemon zest, lemon juice, and a pinch of salt. Mix until well combined.
