Layers of fluffy eggs, fresh vegetables, and melty cheese make this dish perfect for breakfast, brunch, or a light dinner. It’s simple to make, versatile, and sure to be a family favorite!

Ingredients

Scale
  • 4 large eggs
  • 1 cup milk (or a dairy-free alternative)
  • 4 large flour tortillas (8-inch diameter)
  • 1 cup shredded cheddar cheese (or your favorite cheese blend)
  • 1 cup diced vegetables (e.g., bell peppers, onions, mushrooms, spinach)
  • ½ cup cooked chicken or turkey (optional)
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for greasing)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease an 8-inch round baking dish or pie pan with olive oil.
  • Prepare Tortilla Crust: Press one tortilla into the bottom of the dish, letting the edges come up the sides. Layer the remaining tortillas, slightly overlapping, to form a crust that covers the sides and bottom of the dish.
  • Prepare Filling: In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until smooth. Stir in the diced vegetables, cheese, and optional cooked chicken or turkey.
  • Assemble Quiche: Pour the egg mixture into the tortilla-lined dish, spreading it evenly.
  • Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set in the center and lightly golden on top.
  • Cool and Serve: Allow the quiche to cool for 5-10 minutes before slicing into wedges. Serve warm.

Notes

  • Feel free to customize with your favorite vegetables, such as zucchini, cherry tomatoes, or broccoli.
  • For a spicier kick, add diced jalapeños or a sprinkle of red pepper flakes.
  • This quiche can be made ahead and reheated for a quick, satisfying meal.
